  • 2 sheets Puff Pastry Sheets, thawed
  • 2 cups Fresh Spinach, chopped (Can substitute with baby kale or Swiss chard)
  • 1 cup Ricotta Cheese (Cottage cheese works as a substitute)
  • 1/2 cup Parmesan Cheese, grated (Pecorino Romano can be used)
  • 1 tsp Garlic Powder (Fresh minced garlic can be used)
  • Salt & Pepper, to taste
  • 1 tbsp Olive Oil (Optional for sautéing spinach)
  • 1 Egg, beaten (For egg wash to achieve golden color)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet, heat olive oil over medium heat and sauté chopped spinach until wilted. Let cool before mixing with ricotta, Parmesan, garlic powder, salt, and pepper.
  3. Roll out thawed puff pastry sheets on a clean surface and cut into squares.
  4. Place 1-2 tablespoons of the filling in the center of each square. Fold and seal the edges with a fork.
  5. Brush the tops with beaten egg for a golden finish.
  6. Bake for 20-25 minutes until golden brown and puffed up.
  7. Allow to cool slightly before serving.
