  • 2 large eggs
  • 1 cup blanched almond flour
  • 1 tablespoon garlic powder
  • 1 tablespoon dried parsley
  • 2 teaspoons smoked paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 12 chicken tenders – about 1.5 lbs
  • Olive oil cooking spray
  • 2 tablespoons butter
  • 1/4 cup hot sauce
  • 1 tablespoon honey
  • 1 tablespoon tomato paste
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. In a shallow bowl, beat the eggs and season with salt and pepper.
  2. In another bowl, mix almond flour with garlic powder, parsley, smoked paprika, extra salt, and pepper.
  3. Dip each chicken tender into the egg mixture first, then coat with almond flour. Set aside.
  4. Preheat the air fryer to 390°F (200°C) and lightly spray the basket with olive oil.
  5. Place tenders in the basket without overcrowding. Spray lightly with olive oil.
  6. Cook for 7 minutes; flip and spray again before cooking for an additional 4-5 minutes until golden brown.
  7. For the sauce: Melt butter in a pot over medium heat; stir in hot sauce, honey, tomato paste, salt, and pepper. Simmer for 2-3 minutes.
  8. Drizzle or toss cooked tenders in the sauce before serving.
