  • 1 cup oats (ground into flour or oat flour)
  • 1/2 cup rice flour
  • 4 tbsp cornstarch
  • 2 tbsp coconut sugar
  • 1 tbsp flax seeds (ground or chia seeds)
  • 1 tsp baking powder
  • 1 1/2 cups plant-based milk
  • 1 small banana
  • 1/2 tbsp lemon juice
  • 1/2 tsp vanilla extract
  • Oil (for frying)
  • 3 apples (peeled, cored, and chopped)
  • 3 tbsp coconut sugar
  • 2 tbsp plant-based milk
  • 1/2 tbsp lemon juice
  • 1/2 tsp cornstarch
  • 1 tsp cinnamon

Instructions

  1. In a mixing bowl, combine all dry ingredients. Whisk until well blended.
  2. In a food processor or blender, add all wet ingredients except oil. Blend until smooth.
  3. Pour wet ingredients into the dry mixture. Whisk until fully combined.
  4. Let the batter rest for a few minutes.
  5. Heat oil in a non-stick skillet over medium heat. Pour 1/4 cup of batter into the skillet; spread it evenly using the back of a ladle. Cook for about 2-4 minutes until edges lift easily before flipping. After flipping, cook for an additional 1-2 minutes until golden brown. If batter thickens during cooking, add up to 50 ml more plant-based milk as needed.
  6. In another skillet or saucepan, combine all apple filling ingredients without heat. Turn on heat; bring mixture to a boil then let it simmer over low/medium heat for several minutes.
  7. Place a few teaspoons of apple filling onto each crepe. Roll up each crepe carefully and serve with caramel sauce drizzled on top.
