  • 1/2 cup sour cream
  • 2 medium apples, peeled, cored, and diced

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. In a large bowl, cream the softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. Gradually add the dry ingredients to the creamed mixture alternately with sour cream until just combined. Fold in diced apples gently.
  5. Pour half of the batter into the prepared loaf pan and spread evenly. Mix cinnamon and sugar; sprinkle half over the batter. Pour remaining batter on top and finish with the rest of the cinnamon-sugar mixture.
  6. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean. Let cool for about 10 minutes before transferring to a wire rack.
