  • 2 lamb shanks
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 3 garlic cloves, minced
  • 3 large carrots, peeled and cut into chunks
  • 2 celery stalks, chopped
  • 2 tablespoons tomato paste
  • 1 cup apple vinegar
  • 2 cups beef stock
  • Fresh thyme sprigs

  1. Season the lamb shanks with salt and pepper. In a Dutch oven, heat olive oil over medium-high heat and sear lamb until browned on all sides (8-10 minutes).
  2. Remove the lamb from the pot and set aside. Sauté sliced onion until translucent; add minced garlic and cook until fragrant.
  3. Stir in carrots and celery, cooking for another 5 minutes. Add tomato paste and cook for an additional minute.
  4. Deglaze the pot with apple vinegar while scraping browned bits off the bottom.
  5. Return lamb to the pot, cover with beef stock, and top with thyme sprigs.
  6. Cover and simmer on low heat for 2-3 hours until fork-tender.
