Instructions

  1. Slice zucchini into 1/8 inch thick rounds using a mandolin slicer or food processor.
  2. Layer zucchini slices in a colander, sprinkling with salt to draw out moisture; let drain for one hour.
  3. Preheat oven to 225F and line baking sheets with parchment paper.
  4. Pat dry the zucchini slices and arrange them on baking sheets without overlapping. Lightly spray or brush with oil.
  5. Mix paprika, pepper, and remaining salt in a spice shaker; sprinkle over the zucchini.
