  • 1/4 cup balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • 2 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 1 cup cherry tomatoes, halved
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a baking dish with olive oil.
  2. Season chicken breasts with salt and pepper.
  3. In a bowl, whisk together balsamic vinegar, honey or maple syrup, garlic, basil, and oregano.
  4. Heat olive oil in a skillet over medium-high heat and sear chicken for 2-3 minutes on each side until golden brown.
  5. Place chicken in the baking dish, pour the balsamic mixture over it, and add halved tomatoes around the chicken.
  6. Bake for 20-25 minutes until nearly cooked through.
  7. Sprinkle mozzarella on top and return to the oven for an additional 5-10 minutes until melted.
