  • 2 tablespoons ground flax seed or 5 tablespoons applesauce

  • 1 tablespoon vanilla extract
  • 3/4 cup cocoa powder
  • 1 1/2 cups all-purpose flour (or gluten-free flour)
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips

Instructions

  2. If using flax seeds, whisk them with 5 tablespoons of water in a small bowl and let thicken. Skip this step if using applesauce.
  3. In a medium pot, combine sugar and water over medium-low heat until dissolved (about 5-10 minutes).
  4. In a large bowl, mix dry ingredients excluding chocolate chips.
  5. Pour the dissolved sugar mixture into the dry ingredients along with remaining wet ingredients (flax eggs or applesauce).
  6. Stir until just combined; gently fold in chocolate chips.
  7. Transfer batter to an 8×8 baking pan lined with parchment paper.
  8. Bake for about 35-42 minutes; check with a toothpick for doneness.
  9. Let cool completely before slicing.
