  • 2 egg whites
  • 100 g white sugar
  • 1/8 teaspoon salt
  • 1 teaspoon cornstarch
  • 1 teaspoon vanilla essence

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream light brown sugar and softened butter; mix in egg and vanilla essence.
  3. Combine flour, baking powder, and salt; gradually add to the wet mixture.
  4. Drop rounded tablespoons of dough onto the baking sheet; bake for 15 minutes until golden. Cool on wire racks.
  5. For the lemon filling, melt butter in a saucepan; stir in sugar, lemon juice, zest, egg yolks, and salt until thickened.
  6. Whip egg whites until soft peaks form; gradually add sugar until stiff peaks develop, then fold in cornstarch and vanilla essence.
