  • 1 ½ pounds sweet potatoes, cubed
  • 14.5 ounces black beans, rinsed and drained
  • 1 cup green pepper, chopped
  • 1 cup red pepper, chopped
  • 4 tablespoons olive oil
  • Honey and lime juice for sauce
  • Corn or flour tortillas

Instructions

  1. Preheat your oven to 425°F (220°C) and grease a large baking sheet.
  2. In a small bowl, combine cumin, paprika, garlic powder, onion powder, coriander, sea salt, and pepper.
  3. In a large bowl, toss cubed sweet potatoes with 3 tablespoons of olive oil and the spice mixture until well coated.
  4. Spread sweet potatoes on the baking sheet and roast for 20 minutes.
  5. While roasting, prepare the green and red peppers in the same mixing bowl with remaining olive oil.
  6. After 20 minutes, add peppers to sweet potatoes and roast for another 20 minutes.
  7. Mix honey, lime juice, and cilantro in a small bowl for sauce.
  8. Add black beans and corn to roasted vegetables; drizzle with honey-lime sauce.
  9. Roast everything for an additional 10–15 minutes until warmed through.
  10. Serve in warm tortillas with desired toppings.
