  • 2 ⅔ cups + 1 tbsp all-purpose flour
  • 3/4 teaspoon fine sea salt
  • 1/2 cup water
  • 1 tbsp apple cider or white vinegar
  • 3 cups fresh sliced peaches
  • 3 cups fresh strawberries (hulled and quartered)
  • ¼ cup granulated sugar
  • ¼ cup + 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • ¼ tsp fine sea salt
  • Optional: 2-3 tbsp Turbinado sugar

Instructions

  1. Prepare the crust by mixing flour and salt in a food processor, cutting in cold butter until crumbly. Add water and vinegar; pulse until dough forms. Chill for at least one hour.
  2. For the brown butter, melt butter in a saucepan over medium heat while stirring until golden brown and fragrant. Allow to cool slightly.
  3. In a mixing bowl, combine sliced peaches, strawberries, sugar, cornstarch, lemon juice, and salt; toss gently to coat.
  4. Preheat oven to 375°F (190°C). Roll out the chilled dough into two circles. Fit one circle into your baking dish and fill with fruit mixture. Cover with the second dough circle; seal edges and cut slits for steam.
  5. Sprinkle optional Turbinado sugar on top. Bake for about 70 minutes or until golden brown. Cool before serving.
