  • 1 large burrata ball (or 2 small)
  • 45 ripe plums, halved and pitted
  • ½ cup pistachios, chopped
  • 23 sprigs fresh thyme (leaves only)
  • 2 tbsp extra virgin olive oil
  • Sea salt, to finish
  • Cracked black pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Arrange halved plums cut-side up on a lined baking tray. Drizzle with olive oil.
  3. Roast for 20-25 minutes until soft and caramelized.
  4. Let plums cool slightly before plating.
  5. Position burrata in the center of a serving plate, spoon roasted plums around it.
  6. Sprinkle with chopped pistachios and thyme leaves, drizzle with olive oil, then season with salt and pepper.
  7. Serve immediately alongside toasted sourdough or artisan crackers.
