  • 1 lb chicken breast
  • 6 jalapenos (halved and seeds removed)
  • 3 cups fresh cauliflower florets
  • 1 1/4 cup cheddar cheese
  • 8 oz cream cheese (1/3 less fat)
  • 1/2 cup light sour cream
  • 1/4 cup low-fat milk
  • 6 strips turkey bacon
  • Olive oil
  • Cayenne pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. On a baking sheet, place the chicken breast and jalapenos. Drizzle with olive oil, season with salt, and roast for about 20-25 minutes until cooked through.
  3. In a mixing bowl, blend together cream cheese, light sour cream, milk, cayenne pepper, and three-fourths of the cheddar cheese until smooth.
  4. Once roasted, shred the chicken, crumble the turkey bacon, and dice the jalapenos. Add these to the cream cheese mixture along with three-fourths of the remaining jalapenos.
  5. In a greased 9 x 12 baking dish, layer cauliflower florets at the bottom. Spread the chicken mixture over them and top with remaining cheddar cheese, jalapenos, and turkey bacon.
  6. Bake for about 20 minutes until golden brown.
