  • 1 lb boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste
  • 12 oz bowtie (farfalle) pasta
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 teaspoon Cajun seasoning (for the sauce)
  • Fresh chopped parsley, for garnish (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add the bowtie pasta and cook until al dente, about 10-11 minutes. Reserve 1/2 cup of pasta water, then drain and set aside.
  2. While the pasta cooks, heat olive oil and melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the chicken pieces and season with Cajun seasoning, garlic powder, salt, and pepper. Sear the chicken for 8-10 minutes, flipping occasionally until golden brown and fully cooked with crispy edges. Remove from skillet and set aside.
  3. In the same skillet, reduce heat to medium and melt 2 more tablespoons of butter. Add minced garlic and sauté for about 1 minute until fragrant. Pour in heavy cream and milk; stir to combine. Let it simmer gently before adding Velveeta cubes. Stir until completely melted and smooth.
  4. Stir in mozzarella and Parmesan cheese until fully melted. Add 1/2 teaspoon Cajun seasoning; adjust salt and pepper to taste. Add cooked bowtie pasta to the sauce; gently toss to coat. If needed, stir in reserved pasta water to loosen.
  5. Plate the cheesy bowtie pasta next to or underneath the garlic Cajun chicken. Sprinkle with fresh parsley if desired and serve hot.
