  • 2 medium spaghetti squash (about 5 pounds total)
  • 2 ounces cream cheese
  • 3 ounces whole-milk mozzarella cheese, shredded
  • 2 ounces grated Parmesan cheese
  • 1 tablespoon olive oil
  • Fresh parsley
  • Garlic powder
  • Kosher salt
  • Black pepper

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with foil or parchment paper.
  2. Cut the spaghetti squash in half lengthwise and scoop out seeds. Brush cut sides with olive oil and season with salt and pepper. Place cut-side down on the baking sheet and roast for about 40 minutes until tender.
  3. In a mixing bowl, soften cream cheese at room temperature. Add shredded mozzarella, three-quarters of the Parmesan, chopped parsley, and garlic powder; mix well.
  4. Once roasted, flip squash halves over and shred the insides with a fork, leaving some intact in the shell. Combine shredded squash with cheese mixture and fill each half evenly with the mixture. Top with remaining Parmesan.
  5. Bake for an additional 8-10 minutes until cheese melts, then broil for 2-3 minutes until bubbly.
