  • 3/4 cup granulated sugar
  • 1/2 cup 2% milk
  • 1/2 cup canola oil
  • 1 large egg
  • 1 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 jars maraschino cherries
  • 1 cup powdered sugar
  • 1 tablespoon melted butter
  • 2 tablespoons maraschino cherry juice
  • 1/2 teaspoon almond extract

Instructions

  1. Preheat the oven to 350°F. Grease a 9"x5" loaf pan.
  2. In a medium bowl, mix together granulated sugar, milk, canola oil, egg, and almond extract until smooth.
  3. In another bowl, whisk together flour, baking powder, baking soda, and salt. Combine dry ingredients with wet ingredients gently.
  4. Drain and chop maraschino cherries; fold into the batter.
  5. Pour batter into the prepared loaf pan and bake for 50–60 minutes or until a toothpick comes out clean.
  6. For the glaze, whisk powdered sugar, melted butter, reserved cherry juice, and additional almond extract until smooth. Once the bread is cool, drizzle the glaze on top.
  7. Slice and serve as desired.
