  • For Streusel: 1/3 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 3 tablespoons unsalted butter (softened)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, and salt.
  3. In another bowl, whisk together egg, milk, melted butter, and vanilla until smooth.
  4. Gently fold the wet ingredients into the dry until just combined. Carefully fold in cherries.
  5. In a small bowl, combine brown sugar, flour, and cinnamon for the streusel. Cut in softened butter until crumbly.
  6. Spoon muffin batter into prepared muffin cups about 3/4 full and top with streusel.
  7. Bake for 20–25 minutes until a toothpick inserted comes out clean.
  8. Cool in the pan for about 5 minutes before transferring to a wire rack.
