  • 500g chicken breast, diced
  • 2 cups broccoli florets
  • 2 cups mushrooms, sliced
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp olive oil
  • 1 tsp cornstarch + 2 tbsp water (for slurry)
  • tsp chili flakes (optional)
  • Salt & pepper to taste
  • 1 cup jasmine or basmati rice
  • 2 cups water
  • Pinch of salt

Instructions

  1. Cook rice in salted water according to package instructions until fluffy.
  2. Heat olive oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned (5-7 minutes). Remove from the pan.
  3. In the same pan, add sesame oil and sauté onion until translucent. Add garlic, followed by broccoli and mushrooms. Cook until tender-crisp (4-5 minutes).
  4. Return chicken to the pan; pour in soy sauce and stir to combine.
  5. Add cornstarch slurry; simmer until the sauce thickens slightly.
  6. Serve hot over steamed rice.
