  • 4 strips Turkey Bacon, chopped
  • 1 small yellow onion, diced
  • 2 celery stalks, chopped
  • 2 garlic cloves, minced
  • 1/4 cup all-purpose flour
  • 3 cups chicken broth
  • 2 cups diced Yukon Gold potatoes
  • 1/2 tsp dried thyme
  • 1/2 tsp dried parsley
  • Salt and pepper, to taste
  • 1 1/2 cups cooked shredded chicken
  • 1 1/2 cups corn, fresh, frozen, or canned
  • 1 cup half & half
  • 1/3 cup sour cream

Instructions

  1. In a large pot over medium heat, cook chopped turkey bacon until crispy. Remove and set aside.
  2. Sauté diced onion, chopped celery, and minced garlic in the remaining fat until softened (3-5 minutes).
  3. Gradually stir in flour to create a roux.
  4. Slowly add chicken broth while stirring continuously; then add diced potatoes along with thyme and parsley. Simmer until potatoes are tender.
  5. Stir in shredded chicken and corn; cook for an additional 5-7 minutes.
  6. Reduce heat to low; stir in half & half and sour cream, letting it simmer gently before serving.
