  • 2 hard-boiled eggs
  • 1 cup cooked or canned chickpeas
  • 1 avocado
  • 1 cucumber
  • 1 cup cherry or grape tomatoes
  • 1 cup mixed greens (kale, romaine, or arugula)
  • Salt and pepper to taste
  • Pinch of paprika (for garnish)
  • Optional: Olive oil and lemon juice for dressing

Instructions

  1. Boil the eggs in a pot of water for 9-10 minutes. Transfer to an ice bath, cool, peel, and halve.
  2. Chop the cucumber and halve the cherry tomatoes. Slice the avocado.
  3. Layer mixed greens in a bowl as a base, then arrange chickpeas, cucumber, tomatoes, avocado slices, and egg halves on top.
