- 2 hard-boiled eggs
- 1 cup cooked or canned chickpeas
- 1 avocado
- 1 cucumber
- 1 cup cherry or grape tomatoes
- 1 cup mixed greens (kale, romaine, or arugula)
- Salt and pepper to taste
- Pinch of paprika (for garnish)
- Optional: Olive oil and lemon juice for dressing
- Boil the eggs in a pot of water for 9-10 minutes. Transfer to an ice bath, cool, peel, and halve.
