  • 1 cup (2 sticks) butter, room temperature
  • 1¼ cups granulated sugar + ¼ cup powdered sugar
  • ¾ cup canola oil (or vegetable oil)
  • 2 eggs (room temperature)
  • 1 tsp vanilla extract
  • ½ tsp peppermint extract
  • 1 cup dark chocolate
  • 1 cup heavy cream
  • Red jimmies sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, salt, baking soda, and cream of tartar.
  3. In another bowl, beat room temperature butter with granulated and powdered sugars until fluffy. Mix in canola oil, vanilla extract, and peppermint extract.
  4. Add eggs one at a time to the butter mixture, mixing well after each addition.
  5. Gradually combine dry ingredients into the wet mixture until just combined.
  6. Scoop dough onto prepared baking sheets spacing them two inches apart.
  7. Bake for about 10 minutes or until edges are lightly golden. Cool on wire racks.
  8. For ganache, heat dark chocolate and heavy cream in a saucepan until smooth; then dip or drizzle over cooled cookies and top with sprinkles.
