  • 1 1/2 cups Cake Flour
  • 2 tsp. corn starch
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 cup cold, unsalted butter, cubed (16 Tbsp.)
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp. vanilla extract
  • 1 cup packed brown sugar (light or dark)
  • 6 Tbsp. softened butter
  • 2 Tbsp. cinnamon
  • 8 oz. cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups confectioners sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together brown sugar, softened butter, and cinnamon for the filling.
  3. In a large mixing bowl, combine all dry ingredients: all-purpose flour, cake flour, corn starch, baking soda, baking powder, and salt.
  4. In a stand mixer, cream together cold cubed butter and granulated sugar until smooth. Add eggs and vanilla extract; mix well.
  5. Gradually incorporate the dry ingredients until fully combined.
  6. Roll out dough on a floured surface into a rectangle and spread the cinnamon filling evenly over it.
  7. Roll up the dough tightly and slice into equal pieces.
  8. Bake for 9–11 minutes or until edges are golden brown.
  9. Allow cookies to cool before topping with frosting made from cream cheese, butter, confectioners sugar, vanilla extract, and salt.
