  • 1 cup sweetened shredded coconut (toasted or fresh)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream softened butter and sugar until fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla and coconut extracts.
  5. Gradually mix in dry ingredients alternating with coconut milk until just combined.
  6. Pour batter into prepared pans and bake for 25–30 minutes or until a toothpick comes out clean. Cool completely before frosting.
  7. For frosting, beat cream cheese with powdered sugar until smooth; then fold in whipped cream.
  8. Assemble the cake by layering and frosting between layers, then coat the top and sides with shredded coconut.
