  • 1 tablespoon avocado oil

  • 3 cups vegetable broth
  • 1 cup coconut milk
  • 1 bag frozen vegan dumplings (1215 pieces)
  • Chili oil
  • Scallions
  • Crispy garlic
  • Cilantro

Instructions

  1. Heat avocado oil in a heavy-bottom pot over medium-low heat.
  2. Sauté onions, scallion whites, and garlic until softened.
  3. Stir in salt and add mushrooms; cook until soft.
  4. Mix in red Thai curry paste until well combined.
  5. Pour in vegetable broth; bring to a simmer.
  6. Stir in coconut milk; return to a simmer.
  7. Add frozen dumplings; cook for 7 minutes until heated through.
