  • 200ml heavy cream
  • 80g mascarpone cheese
  • 120ml coconut milk
  • 140g softened butter
  • 160g all-purpose flour
  • 25g unsweetened cocoa powder
  • Gooey cocoa spread

Instructions

  1. For the mousse, whip heavy cream until soft peaks form, then fold in mascarpone and powdered sugar.
  2. Soak gelatin sheets and dissolve in warmed coconut milk; fold into the whipped mixture.
  3. Pour half into hemisphere molds, add cocoa spread, cover with remaining mousse, and freeze for at least 6 hours.
  4. Make shortbread by mixing ingredients until dough forms; roll out, cut shapes, and bake until firm.
  5. Once cooled, assemble by placing domes on shortbreads and garnish with grated coconut.
