  • 1 cup Ditalini pasta
  • 2 tbsp olive oil
  • 1 lb ground turkey
  • 5 cloves garlic (minced)
  • 1 onion (diced)
  • 1 cup carrots (chopped)
  • 3 stalks celery (diced)
  • 3 cups chicken broth
  • 16 oz tomato sauce
  • 15 oz diced tomatoes
  • 1 tsp dried basil
  • Salt/Pepper (to taste)
  • 1/2 tsp Italian seasoning
  • 1 cup water
  • 15 oz red kidney beans (rinsed/drained)
  • 15 oz Great Northern beans (drained/rinsed)

Instructions

  1. Boil water in a large pot and cook the Ditalini pasta according to package directions. Drain and set aside.
  2. In a Dutch oven, heat 1 tablespoon of olive oil over medium heat. Add ground turkey and cook until browned; set aside.
  3. Sauté garlic, onion, carrots, and celery in the same pot for 3-4 minutes until tender.
  4. Stir in chicken broth, tomato sauce, diced tomatoes, herbs, cooked turkey, and water; mix well.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Add both types of beans and cooked pasta; stir until heated through.
  7. Serve hot with your choice of bread or salad.
