1 lb boneless, skinless chicken breasts
12 oz rigatoni pasta
1 cup heavy cream
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
4 cloves garlic
2 tbsp olive oil
3 tbsp unsalted butter, divided
1 tsp Cajun seasoning
Salt and black pepper, to taste
1 tsp Italian seasoning
Crushed red pepper flakes, to taste
Fresh chopped parsley, for garnish
Instructions
Cook rigatoni in salted boiling water until al dente (10-11 minutes). Reserve ½ cup pasta water; drain and set aside.
Season chicken with Cajun seasoning, salt, and pepper.
In a skillet, heat olive oil and 1 tbsp butter over medium-high heat. Sear chicken until golden brown (7-8 minutes), adding half the garlic in the last minute. Remove chicken and keep warm.
In the same skillet, melt remaining butter, add rest of the garlic, sautéing until fragrant (30 seconds).
Slowly stir in heavy cream; simmer for 2-3 minutes until thickened.
Mix in mozzarella and Parmesan until creamy. Season with Italian seasoning and crushed red pepper flakes.
Toss in rigatoni; if needed, add reserved pasta water to loosen sauce.
Serve topped with chicken and garnish with parsley.
