  • 4 to 6 cups low sodium chicken broth
  • 4 cups cooked shredded chicken
  • 8 ounces cream cheese (softened)
  • 1 cup shredded cheddar cheese
  • 3 to 4 cups baby spinach
  • ¼ cup heavy cream

Instructions

  1. In a Dutch oven, cook diced turkey bacon until crispy. Remove with a slotted spoon and set aside.
  2. Add butter to the pot. Once melted, sauté onions for about 3 minutes, then add minced garlic and cook for another 20 seconds.
  3. Pour in chicken broth and seasonings; bring to a boil, then simmer for about 5 minutes.
  4. Stir in shredded chicken; cook for an additional 5 minutes. Add cream cheese and whisk until melted, followed by cheddar cheese until fully combined.
  5. Incorporate spinach and heavy cream; cook for another minute.
