  • 6 tbsp unsalted butter (for sauce)
  • 4 cloves garlic, minced
  • 1 lb rotini pasta
  • 4 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • 1 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Season chicken cubes with Cajun seasoning, smoked paprika, salt, and black pepper.
  2. In a large skillet over medium-high heat, add olive oil and cook the seasoned chicken until golden brown (about 6-8 minutes). Remove and set aside.
  3. In the same skillet, melt unsalted butter and sauté minced garlic until fragrant.
  4. Cook rotini pasta according to package directions; drain while reserving some pasta water.
  5. In a large pot or Dutch oven, melt unsalted butter again and sauté minced garlic. Then add heavy cream and chicken broth; bring to simmer.
  6. Stir in grated Parmesan cheese and seasonings; simmer until sauce thickens slightly (about 5-7 minutes).
  7. Combine cooked rotini with the creamy sauce and gradually add reserved pasta water if needed for consistency.
  8. Mix in the cooked garlic butter chicken before serving.
