  • 3 pounds beef chuck roast
  • 3 dried guajillo chilies
  • 2 dried ancho chilies
  • 1 onion
  • 4 garlic cloves
  • 1 can diced tomatoes
  • 2 cups beef broth
  • Corn tortillas
  • Oil for frying

Instructions

  1. Soak the dried chilies in hot water for 15 minutes. Blend with onion, garlic, and tomatoes until smooth.
  2. Place the beef in the slow cooker. Pour the blended chili mixture over the beef and add broth, vinegar, oregano, cumin, bay leaves, salt, and pepper.
  3. Cook on low for 8-10 hours until the beef is tender.
  4. Shred the beef with two forks and mix it with the sauce from the cooker.
  5. Heat oil in a skillet; dip tortillas in the top fat layer of broth and fry until crispy on both sides.
  6. Fill each tortilla with shredded beef mixture, fold, and fry again until crispy.
