  • 1 pound ribeye steak or sirloin (or ground beef)
  • 1 large onion, thinly sliced
  • 1 large green bell pepper, thinly sliced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup sour cream
  • 2 cups shredded provolone cheese
  • 1 cup beef broth

Instructions

  1. Brown the beef in a large skillet with olive oil over medium-high heat, seasoning with salt, pepper, garlic powder, and onion powder.
  2. Slice onions and bell peppers into thin strips.
  3. In your crockpot, layer half of the potatoes, followed by half of the cooked beef, onions, bell peppers, and cheese. Repeat layers with remaining ingredients.
  4. In a bowl, mix cream of mushroom soup, sour cream, and beef broth until smooth; pour over layered ingredients.
  5. Cover and cook on low for 6 hours or high for 3 hours. Add remaining cheese in the last 30 minutes of cooking.
