  • ¾ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Zest of 1 large orange
  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup fresh orange juice
  • 1 cup powdered sugar
  • 2 tablespoons fresh orange juice (for glaze)
  • ½ teaspoon orange zest (for glaze)
  • ½ teaspoon vanilla extract (optional, for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. Soak the chopped dates in boiling water mixed with baking soda for about 10 minutes until softened.
  3. In a bowl, cream together softened butter and brown sugar until light and fluffy. Add eggs one at a time, followed by vanilla extract and orange zest.
  4. In another bowl, mix flour, baking powder, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture along with fresh orange juice; combine until just mixed.
  6. Fold in the soaked dates along with any remaining liquid.
  7. Pour batter into the prepared loaf pan and bake for 50–55 minutes or until a toothpick comes out clean.
