  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 4 cups chicken broth
  • 2 cups water
  • 8 oz uncooked lasagna noodles, broken into pieces
  • 15 oz ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh basil, for garnish
  • 2 teaspoons Italian seasoning
  • 1 teaspoon sugar
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, brown the ground turkey for about 5–7 minutes. Drain excess fat if needed.
  2. Add chopped onion and sauté for 3 minutes until translucent; stir in minced garlic and cook for another minute.
  3. Pour in crushed tomatoes, chicken broth, and water; add Italian seasoning and sugar. Season with salt and pepper to taste and bring to a simmer.
  4. Add broken lasagna noodles and cook according to package instructions until al dente (approximately 10–12 minutes).
  5. Meanwhile, mix ricotta cheese with half of the mozzarella and Parmesan in a bowl.
  6. Stir the cheese mixture into the soup after cooking the noodles until well combined.
  7. Serve hot, topped with remaining mozzarella and fresh basil.
