  • 1/2 cup Greek yogurt
  • 1/2 cup buttermilk
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 tsp almond extract
  • 3/4 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 1/2 cups cherries (fresh or canned)
  • 1 tbsp cornstarch
  • 1/2 cup sliced almonds
  • 1/2 cup confectioner’s sugar
  • 1 to 2 tbsp cream

Instructions

  1. Preheat your oven to 350°F (177°C). Prepare an 8½-inch loaf pan by lining it with parchment paper and spraying the sides with nonstick spray.
  2. In a large bowl, mix together the eggs, Greek yogurt, buttermilk, melted butter, vanilla extract, almond extract, and sugar until well combined.
  3. In another bowl, whisk together the flour, baking powder, and salt. Gradually sift this into the wet ingredients and mix until just combined.
  4. Prepare the cherries by pitting and quartering them; toss in cornstarch to coat evenly. Fold cherries and sliced almonds into the batter gently.
  5. Pour the batter into the prepared loaf pan and sprinkle remaining cherries and almonds on top.
  6. Bake for about 50 to 60 minutes or until a toothpick inserted comes out clean. Cool on a wire rack before glazing.
  7. For the almond glaze, whisk together confectioner’s sugar, almond extract, and cream until smooth.
