  • 1 teaspoon gluten-free baking powder
  • 1 packet rapid rise/instant yeast (2 1/4 teaspoons)
  • 1/4 cup extra virgin olive oil
  • 1/4 cup honey (or agave nectar/maple syrup)
  • 1 teaspoon apple cider vinegar
  • 1 1/2 cups warm water (100-110°F)
  • 3 egg whites (room temperature)
  • 1 teaspoon salt

Instructions

  1. Preheat your oven to 350°F and grease your bread pan.
  2. In a large bowl, mix the gluten-free flour, baking powder, and yeast.
  3. Add olive oil, honey, apple cider vinegar, and warm water to the dry mixture; mix on low speed for one minute.
  4. Incorporate egg whites and salt; mix on medium for another minute until dough resembles thick cake batter.
  5. Pour the dough into the prepared pan and cover with plastic wrap and a towel; let it rise in a warm spot for about 30 minutes.
  6. Bake in the preheated oven for about 30 minutes until golden brown and the internal temperature reaches 205-210°F.
  7. Cool in the pan for ten minutes before transferring to a wire rack. Slice when fully cooled.
