- 1 tablespoon olive oil
- 1 medium white onion, diced
- 3 celery ribs, diced
- 4 carrots, diced
- 3 zucchini, diced
- 1 tablespoon minced garlic
- 28 ounces canned diced tomatoes
- 15 ounces canned tomato sauce
- 15 ounces canned white cannellini beans
- 15 ounces canned kidney beans
- 6 cups vegetable broth
- 1 tablespoon dried basil
- 1 tablespoon dried oregano
- 8 ounces elbow macaroni or shell pasta
- 1 cup baby spinach
- Heat the salted butter and olive oil in a large soup pot over medium heat until melted.
- Add the diced onion and sauté for about 3 to 5 minutes until softened.
- Stir in celery, carrots, and zucchini; cook for about 8 to 10 minutes until they begin to soften.
- Add minced garlic and cook for an additional minute.
- Mix in diced tomatoes (with juice), tomato sauce, both types of beans, vegetable broth, basil, and oregano. Bring to a boil.
- Once boiling, add the pasta and reduce heat to maintain a low boil for about 10 to 12 minutes until pasta is tender.
- In the final two minutes of cooking, stir in the chopped spinach until wilted.
- Season with salt and pepper to taste before serving hot.
