  • 1 tablespoon olive oil
  • 1 medium white onion, diced
  • 3 celery ribs, diced
  • 4 carrots, diced
  • 3 zucchini, diced
  • 1 tablespoon minced garlic
  • 28 ounces canned diced tomatoes
  • 15 ounces canned tomato sauce
  • 15 ounces canned white cannellini beans
  • 15 ounces canned kidney beans
  • 6 cups vegetable broth
  • 1 tablespoon dried basil
  • 1 tablespoon dried oregano
  • 8 ounces elbow macaroni or shell pasta
  • 1 cup baby spinach

Instructions

  1. Heat the salted butter and olive oil in a large soup pot over medium heat until melted.
  2. Add the diced onion and sauté for about 3 to 5 minutes until softened.
  3. Stir in celery, carrots, and zucchini; cook for about 8 to 10 minutes until they begin to soften.
  4. Add minced garlic and cook for an additional minute.
  5. Mix in diced tomatoes (with juice), tomato sauce, both types of beans, vegetable broth, basil, and oregano. Bring to a boil.
  6. Once boiling, add the pasta and reduce heat to maintain a low boil for about 10 to 12 minutes until pasta is tender.
  7. In the final two minutes of cooking, stir in the chopped spinach until wilted.
  8. Season with salt and pepper to taste before serving hot.
