  • 1 ⅓ cups regular unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon kosher salt
  • 1 teaspoon espresso powder
  • 1 cup unsalted butter (room temperature)
  • 2 cups granulated sugar
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon vanilla extract
  • 4 large eggs (room temperature)
  • ¾ cup creamy peanut butter
  • 1 cup vegan marshmallows fluff

Instructions

  1. Preheat the oven to 350°F. Line a 9×13-inch ceramic baking dish with parchment paper.
  2. In a large bowl, whisk together cocoa powder, flour, baking powder, salt, and espresso powder. Set aside.
  3. In a saucepan over medium heat, melt the butter and sugar until boiling; cook for an additional two minutes. Remove from heat and stir in chocolate chips and vanilla until melted.
  4. Let the mixture cool slightly before adding eggs one at a time, stirring well after each addition.
  5. Gradually mix in dry ingredients until just combined. Pour half of the batter into the prepared dish.
  6. Spread peanut butter and then marshmallow fluff over the batter before topping with remaining brownie batter.
  7. Bake for about 25–30 minutes or until a toothpick comes out mostly clean.
