This quick and elegant meal is perfect for busy weeknights or special gatherings, as the rich garlic butter sauce enhanced by fresh lemon elevates the flavors to new heights.

Ingredients

Scale
  • 1 salmon fillet (about 150-180g)
  • 1 tbsp butter
  • 1 clove garlic, minced
  • 1 tsp olive oil
  • Salt & pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • 1 lemon wedge (for serving)
  • 1 cup cooked white rice (jasmine or basmati)

Instructions

  1. Cook rice according to package instructions. Once done, fluff with a fork and keep warm.
  2. Pat the salmon dry with paper towels and season both sides with salt and pepper.
  3. Heat olive oil in a skillet over medium heat. Once hot, place salmon skin-side down and cook for 4-5 minutes until golden brown. Carefully flip and cook for another 3-4 minutes until cooked through.
  4. In the same skillet, lower the heat and add butter along with minced garlic. Cook for about 30 seconds until fragrant and spoon this mixture over the salmon while it finishes cooking.
  5. Serve the salmon over fluffy rice, garnished with freshly chopped parsley and a lemon wedge on the side.
