  • 300g baby potatoes

  • 1 cup cherry tomatoes
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 garlic cloves, minced
  • Fresh parsley, chopped
  • Salt and pepper to taste
  • Lemon wedge for serving

  1. Preheat your oven to 200°C (400°F). Toss baby potatoes with 1 tablespoon of olive oil, salt, and pepper in a mixing bowl. Spread on a baking sheet and roast for 20-25 minutes until golden.
  2. Season each salmon fillet with salt and pepper. In a skillet over medium heat, heat 1 tablespoon of olive oil and sear the salmon for about 3-4 minutes per side until golden brown.
  3. Add broccoli florets and cherry tomatoes to the skillet; sauté for 3-4 minutes until the veggies are cooked through.
  4. In a small pan over low heat, melt butter and add minced garlic; cook for about 1 minute until fragrant. Stir in chopped parsley.
