  • 3 tbsp Dijon mustard
  • 2 tbsp honey
  • 2 tbsp olive oil
  • Fresh rosemary and thyme sprigs
  • 1 cup chicken broth
  • Salt & freshly ground black pepper, to taste

  2. Season the lamb shoulder generously with salt and pepper.
  3. In a bowl, mix garlic, Dijon mustard, honey, and olive oil; rub this mixture over the lamb.
  4. Place the lamb in a roasting pan surrounded by fresh rosemary, thyme, and a bay leaf.
  5. Pour chicken broth around the lamb, then cover tightly with foil.
  6. Roast for about 4 hours until fork-tender; remove foil during the last 30 minutes for browning.
  7. Let rest for 10-15 minutes before slicing.
