  • 1/2 cup plain Greek yogurt
  • 1/2 cup milk of choice
  • 2 eggs
  • 2 cups gluten-free all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup cocoa powder
  • 2 cups powdered sugar
  • 810 tsp milk
  • 1 tsp vanilla extract, optional

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin pan or use silicone molds.
  2. In a mixing bowl, whisk together melted butter, maple syrup, Greek yogurt, milk, vanilla extract, and eggs until smooth.
  3. In another bowl, mix gluten-free flour, baking soda, salt, and cocoa powder.
  4. Gradually fold the dry ingredients into the wet mixture until just combined; lumps are okay.
  5. Fill each muffin cup about two-thirds full with batter.
  6. Bake for 10-12 minutes or until a toothpick inserted comes out clean.
