  • 2 teaspoons dry active yeast
  • 6 tablespoons warm water
  • 2 tablespoons cane sugar
  • 1 1/2 cups gluten free flour blend
  • 1/8 teaspoon salt
  • 1/3 cup canned coconut milk
  • 1 large egg
  • 2 tablespoons melted butter
  • Oil for frying
  • Powdered sugar for coating

Instructions

  1. Activate the yeast by mixing warm water, yeast, and cane sugar. Let sit for 10 minutes until frothy.
  2. In a bowl, combine gluten free flour blend and salt. Add the yeast mixture, coconut milk, egg, and melted butter. Mix into a soft dough.
  3. Cover the bowl with plastic wrap and let rise for 45-60 minutes until doubled in size.
  4. Roll out the dough to about 1/2 inch thick on a floured surface and cut into squares.
  5. Heat oil in a Dutch oven to around 350º F. Fry dough squares in batches for about 1½ minutes per side until golden brown.
  6. Drain on paper towels and coat with powdered sugar while warm.
