Ingredients

Scale
  • 3/4 cup + 2 tbsp warm water
  • 10 g fresh yeast
  • 1 1/2 tsp organic cane sugar
  • 1 cup white rice flour
  • 2/3 cup tapioca flour
  • 2 tsp psyllium husk powder
  • 1/2 tsp salt
  • 2 tsp oil

Instructions

  1. Activate the yeast by combining warm water and sugar in a small bowl. Sprinkle yeast on top and let sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, whisk together rice flour, tapioca flour, psyllium husk powder, and salt.
  3. Combine the activated yeast mixture and oil with the dry ingredients until a dough forms.
  4. Knead gently on a surface dusted with rice flour for about 2 minutes until smooth.
  5. Divide the dough into five portions, shape into disks about 1/4 inch thick.
  6. Preheat the oven to 475°F (245°C). Place pitas on parchment-lined baking sheet and bake for 5-7 minutes until puffed and lightly golden.
  7. Let cool on a wire rack before serving.
