  • 1 lb sirloin steak or chicken/turkey, cut into bite-sized pieces
  • Salt & black pepper, to taste
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 tbsp all-purpose flour
  • 2 cups milk
  • 1 cup beef broth
  • 2 cups shredded sharp cheddar cheese
  • 1 tsp Dijon mustard, optional
  • 1 tsp paprika
  • 1 package (20 oz) cheese tortellini
  • ½ cup shredded mozzarella, for topping
  • 2 tbsp chopped parsley, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Season the steak with salt and pepper. Heat olive oil in a skillet over medium-high heat.
  2. Sear the steak for about 2–3 minutes on each side until browned. Remove from heat.
  3. In the same skillet, melt butter; add minced garlic; cook briefly before stirring in flour to create a roux. Gradually whisk in milk and beef broth, then stir in cheddar cheese until creamy.
  4. Cook tortellini per package instructions but undercook slightly. Drain and toss with olive oil.
  5. Grease a baking dish. Combine tortellini, seared steak, and cheese sauce; mix gently. Top with shredded mozzarella.
  6. Bake uncovered for 20–25 minutes until bubbly and golden.
