  • 23 tbsp milk (or plant milk)
  • Salt to taste
  • 1 cup cucumber, sliced
  • 1 cup cherry or plum tomatoes, halved
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 cup arugula
  • 1 tsp olive oil
  • 1 tsp lemon juice or vinegar
  • Salt & pepper

Instructions

  1. Season the chicken breast with salt, pepper, and optional garlic powder.
  2. Heat olive oil in a skillet over medium heat and cook the chicken for 5-6 minutes per side until golden brown and cooked through. Let rest before slicing.
  3. Boil diced potatoes in salted water until fork-tender (about 12-15 minutes), then drain and mash with butter and milk until smooth. Add salt to taste.
  4. In a mixing bowl, combine cucumber, tomatoes, bell peppers, and arugula. Drizzle with olive oil and lemon juice (or vinegar), season with salt and pepper, and toss gently.
