  • 1kg Baking Potatoes
  • 1 liter Chicken Stock
  • 23 Lemons
  • 3 tbsp Olive Oil
  • 200g Feta Cheese
  • 100g Cream Cheese
  • Dried Oregano
  • Garlic

Instructions

  1. Boil the diced potatoes in chicken stock and lemon juice until knife-tender.
  2. Drain and let the potatoes steam dry for about 10 minutes.
  3. Preheat your oven to 390°F (200°C) and toss the dried potatoes with olive oil, oregano, salt, pepper, and garlic cloves.
  4. Roast in the oven for 40-45 minutes until golden brown and crispy.
  5. Meanwhile, blend feta cheese, cream cheese, olive oil, and honey in a food processor until smooth.
  6. Serve the roasted potatoes on top of the whipped feta with fresh parsley and a squeeze of lemon juice.
