  • 1 tbsp olive oil (for chicken)
  • tsp garlic powder
  • tsp paprika
  • Salt & pepper to taste
  • 1 medium sweet potato, halved
  • 1 cup asparagus spears, trimmed
  • cucumber, sliced
  • 1 tsp olive oil (for veggies)

Instructions

  1. Preheat the oven to 400°F (200°C). Place halved sweet potatoes on a baking sheet, season, and roast for 30-35 minutes until tender.
  2. Rub chicken breast with olive oil and season with garlic powder, paprika, salt, and pepper. Grill over medium-high heat for about 5-6 minutes per side until cooked through. Slice thinly.
  3. In the last 10 minutes of roasting sweet potatoes, sauté asparagus and cucumber in a bit of olive oil until tender-crisp.
  4. Assemble the bowl by arranging sliced grilled chicken alongside roasted sweet potatoes, asparagus, and cucumber. Garnish as desired.
