1 chicken breast, sliced into strips
1 tbsp olive oil
tsp garlic powder
tsp oregano
Salt & black pepper
1 medium sweet potato, cut into wedges
1 tbsp olive oil
tsp paprika
Salt to taste
Avocado, diced
1 cup cherry tomatoes, halved
1 small red onion, sliced
1 cup mixed greens or chopped romaine
1 tsp olive oil
1 tsp lemon juice
Salt & pepper
2 tbsp plain Greek yogurt
1 tsp lemon juice
1 tsp chopped parsley or cilantro
Salt & pepper to taste
Instructions
Preheat oven to 200°C (400°F). Toss sweet potato wedges with olive oil, paprika, and salt. Spread on a baking sheet and roast for 25-30 minutes, flipping halfway through.
Coat chicken strips with olive oil, garlic powder, oregano, salt, and pepper. Grill or pan-sear over medium heat for about 4-5 minutes per side until golden brown.
In a bowl, mix greens, diced avocado, halved tomatoes, and sliced onion. Drizzle with olive oil and lemon juice; season to taste.
For the sauce, combine Greek yogurt with lemon juice and fresh herbs; season as desired.
Serve grilled chicken alongside sweet potatoes and salad; drizzle sauce over the top.
