Instructions

  1. Marinate the chicken with olive oil, lemon juice, Dijon mustard, garlic, smoked paprika, salt, and pepper for at least 30 minutes.
  2. Preheat the oven to 425°F (220°C). Toss diced sweet potatoes with olive oil, smoked paprika, garlic powder, and salt; roast for 25–30 minutes until tender.
  3. Grill marinated chicken over medium-high heat for 6–7 minutes on each side until fully cooked (165°F internal temperature).
  4. Assemble your bowl by layering quinoa or rice as a base (if using), followed by greens, sliced chicken, roasted sweet potatoes, and optional toppings.
