  • 1 tablespoon grated garlic
  • 1 tablespoon grated ginger
  • 2 tablespoons low sodium soy sauce
  • 12 tablespoons gochujang (to taste)
  • Pickled cucumbers (made with rice vinegar, sugar, and salt)

Instructions

  1. Prepare the pickled cucumbers by combining rice vinegar, salt, sugar, and ice in a bowl. Add cucumber slices and refrigerate for at least four hours.
  2. Make the marinade by whisking sesame oil, garlic, ginger, soy sauce, gochujang, brown sugar, honey, and rice vinegar in a bowl. Marinate chicken thighs for at least two hours or overnight.
  3. Grill the marinated chicken over medium-high heat for about 6–8 minutes per side until fully cooked (internal temperature should reach 165°F). Let rest before slicing.
